Cleaver Knife
A cleaver is a large knife that varies in its shape but usually resembles a rectangular-bladed hatchet. It is largely used as a kitchen or butcher knife intended for hacking through bone. It works extremely well to chop, mince and tenderize boneless cuts of meat. It can also be used to quickly scale fish. However, it is not meant to be used to chop large bones as the blade edge is too fine and will likely chip or break. Turned on its side, the cleaver is an excellent tool for smashing garlic and ginger. Meat cleavers have a hole in the blade so that butchers or chefs can hang them. The sharp edge of the blade is used for cutting, while the blunter top edge is used to pound and tenderize meat.
